Olives and Garlic Bruschetta Bites Recipe
This Olives and Garlic Bruschetta Bites recipe is Cheesy garlic bread, topped with a generous topping of a mix of green olives, tomatoes, fresh mint and parsley. It is one of the easiest and a very quick snack recipe. Perfect for your parties or a Friends get together snack.
So what can you make when you have loads of olives in your fridge?
There are tons of recipes you can use making olives, or just eat them as is with a glass of wine and some cheese. I wanted to make a simple, light snack for the evening.
I had some pitted green olives marinated with garlic and thyme gifted to me by fragata olives UK and so decided to make this yum Olives and Garlic Bruschetta Bites Recipe, that i promise you will love .You can use available olives green , black or a mix of both.
SOME BRUSCHETTA FACTS
Bruschetta is an open toast normally made using sourdough natural yeast bread. It tastes best with it , however you can use any base available to you.
It is sliced into 1/2″ /1cm slices and then heated. Once crusty you rub a cut end of the garlic and drizzle some extra virgin olive oil . The top it with any topping.

I used a regular tiger loaf to make my bruschetta as i wanted tiny bite sized snack and sliced into 1/2″ small slices, which made a perfect bite sized snack, perfect for my evening snack.
INGREDIENTS REQUIRED FOR THE OLIVES AND GARLIC BRUSCHETTA BITES
All you need for this recipe are some green olives (or maybe black, or maybe a mix of both ), tomatoes, fresh parsley, mint leaves, salt ,pepper , EVOO ,garlic butter and some bread.
I had some homemade garlic butter with me, so i used that. Check the quick recipe below for homemade garlic butter.
MAKING GARLIC BUTTER AT HOME
To make garlic butter, take 2 tbsp of your regular butter (make sure it is smooth enough to mix). I use Kerrygold butter, or yeo valley organic butter.
In India my mum makes this using Amul butter.Grate 7-8 cloves of fresh garlic, and mix in the butter. Add 1/4 tsp of dried oregano . Give everything a good mix, and store in a jar in the fridge.
Get it at the room temperature while making these garlic and olive bruschetta bites recipe.
LET’S GET STARTED WITH SOME COOKING FUN
Chop the tomatoes, and the olives.Finely chop parsley leaves, and a few mint leaves.
Mix the tomatoes, olives, parsley and mint.Add salt and pepper. Drizzle EVOO and give everything a mix. Keep aside.
LET’S GET THE BREAD READY AND MAKE THE BRUSCHETTA BITES
Slice you breads into 1/2″ slices. Rub a nice layer of garlic butter on each slice.
Sprinkle some grated cheese. I used Cheddar. You can use any cheese you want to.In a preheated oven heat these slices at 170 degrees for 4-5 minutes, till the cheese melts.
Now top each slice with a generous amount of the Olive and Tomato mix. Drizzle a little EVOO and the Olives and Garlic Bruschetta Bites are ready to be devoured.

Garlic and Olives Bruschetta Bites Recipe

Ingredients
Garlic bread
- 1 loaf bread or take sourdough bread slices
- 2 tbsp garlic butter refer to the recipe for homemade garlic butter above
- Grated cheese Cheddar / any grated cheese of your choice
olives and tomato mix
- 1 small bowl chopped green olives chopped
- 1 small ripe red tomato chopped
- few sprigs fresh parsley finely chopped
- few fresh mint leaves finely chopped
- 1 tsp salt
- 1/2 tsp black pepper freshly ground/ crushed pepper
- 1 tsp EVOO
- Some more EVOO for drizzling on the bruschetta
Instructions

- Chop the tomatoes, and the olives.Finely chop parsley leaves, and a few mint leaves.
