Melons, Mango and herbs summer salad recipe
This super simple, quick and fresh, Melons, Mango and herbs summer salad recipe, using my favourite summer fruits- Melons and mangoes along with heavenly herbs dressing, is a perfect treat for your friends during evening get togethers , or summer lunches.
The herbs used in this recipe were gifted by Spice way UK, for me to review and try in my recipes.
Sometimes life just moves in a whirlwind. You are swayed away in circles , just moving faster and faster wherever the wind is taking you.
Last few days have been such a whirlwind. I have been on my toes, moving and moving , swaying away from one task to another and to another. Cooking, photography, work ,shopping, daily chores, my daughters school and her activities, packing for a month long trip to india and more are all activities i’ve been entangled in. I have had no time to sit and breathe. Now finally when i am flying, i get the time to sit , and ponder over my last few days. This happens with me every time i am travelling.
Does this happen with you as well? Last few days before my travel are always so so very crazy!
Amidst all this wild mayhem ( going on in my mind) in the last few days i had received these amazing blend of spices from Spiceway UK, which i used in a few of my very interesting recipes, butttt i wasn’t getting any time to post these recipes. Now that i finally was able to grab hold of my laptop, i decided to share this simple, delectable recipe with you guys, that was made using the Heavenly herbs spice blend gifted to me by Spice way UK.
This salad as the name suggests has melons, mangoes, and heavenly herbs. Yes, heavenly herbs is one of the spice mix blends that spice way UK very kindly gifted me . The other spices were ravishing rosemary, and magic majadra, which i’ve been using a lot in some other recipes.
As the name suggests, Melons, mango and herbs summer salad, is an effortless salad, made by mixing watermelon, musk melon, mangoes, cucumber, feta cheese, dressed using a mix of extra virgin olive oil, lemon and heavenly herbs.All this mixed and topped with a sprinkle of fresh mint leaves, a handful of pomegranate seeds and sunflower seeds. Yummmm. That has all the delicious fresh juicy summer fruits, freshness of mint leaves and flavours from heavenly herbs.
Heavenly Herbs-
Heavenly herbs is a mix of lots of dried herbs and spices. When I received this box, I was wondering where I can use this, and the soaring temperatures of the last few days decided that for me. I made this healthy , delicious Melon , mango, feta and heavenly herbs salad.
This is a no fuss, straight forward salad, which you can easily alter , as per the fruits available in hand.
The dressing for the salad is made using the heavenly herbs blend by spice way uk. Heavenly herbs is a mix of parsley, lemon, thyme, dill, coriander, sumac, black pepper, garlic, cumin, cardamom, tarragon, mint, bay leaves, hyssop, sage , lemon grass. So you need not gather a ton of spices, or herbs to add flavour to your salad. You just need to add the required amount of this herbs blend and ta dhaaaaa, the fresh salad is ready to be savoured by you, your family and friends.
I used a melon baller to scoop the nice , little ,circular balls out of watermelon, melons and mangoes, and some star shaped as I wanted the salad to look interesting But you can simple cut chunks of fruit to make this salad. I promise , it will be as delicious. And if you, like me have a child, who practices his/her knowledge of shapes through the food you prepare, then you got to be ready with a set on interesting cutters , to style your salad.
Gathering the salad ingredients –
Scoop the balls of melon , watermelon and mango and keep in the refrigerator to be chilled till you cut and prepare the rest of the ingredients. When you scoop out the balls, a lot of fruit goes waste, so do not throw it away. Just peel and keep that separately and I will tell you later how I used that fruit.
Cut chunks of cucumber, crumble a little feta cheese, and tear a few fresh mint leaves.
Preparing the dressing
You would need olive oil, fresh lemon juice, and heavenly herbs seasoning. Gently whip these together, and your dressing is ready.
Toppings for the salad
I used fresh pomegranate seeds, as I really like to sprinkle these on my salads and meals, and they add a little crunch as well. Also in this salad I used sunflower seeds and fresh mint leaves . You can alternate these with any seeds , nuts of your choice.
And the salad is ready to be served
Once everything is ready, mix the melons, mangoes, cucumber. Add crumbled feta cheese. Pour over the heavenly herbs dressing. Give it a good mix. Top it with pomegranate ,sunflower seeds and a few fresh mint leaves. Add a sprinkle of heavenly herbs herbs and serve the salad chilled.
What did i do with leftover fruits after scooping out the melon and mango balls?
I had a lot of left over watermelon , melon and little bit of mango after I scooped out the fruits. Whatever fruit was left after scooping out the balls, i peeled and cut that fruit separately, and collected those in the fridge.
Add all the fruits together in a blender. Add honey, and a little squeeze of a lemon, a few sprig of fresh mint leaves.Add ice, and blend everything together to make a melon and mango crush. This is a super quick fresh fruit crush that the kids and grown ups will devour after a hot day.

Ingredients
- 1 cup scooped balls of watermelons you can cut these instead of making scoops.
- 1 cup scooped balls of musk melon/ melons you can cut these instead of making scoops.
- 1 cup scooped balls of mangoes you can cut these instead of making scoops.
- 1/2 cup cucumbers chopped in cut in chunks
- 2 tbsp heavenly herbs by spiceway uk
- 1 tsp heavenly herbs by spiceway uk for sprinkling over
- 1/4 cup EVOO
- 1 tsp fresh lemon juice
- 2 tbsp pomegranate seeds
- 1/4 cup crumbed feta cheese
- 1 tbsp sunflower seeds
- a pinch pf salt
- few fresh mint leaves
Instructions
Preparing the fruits
- Scoop melon , watermelon and mango using the melon scooper and keep in the refrigerator to be chilled till you cut and prepare the rest of the ingredients.
- Cut chunks of cucumber, crumble a little feta cheese, and tear a few fresh mint leaves.
Making dressing
- Mix olive oil, fresh lemon juice, and heavenly herbs seasoning. Gently whip these together, and your dressing is ready.Keep aside.
Preparing the salad
- Mix the melons, mangoes, cucumber. Add crumbled feta cheese.
- Pour over the heavenly herbs dressing.
- Mix everything together, top it with pomegranate and sunflower seeds. Add a sprinkle of heavenly herbs dressings and serve the salad chilled.
Notes
