What you need to make roasted garlic butter – Ingredients and Substitutes

Roasted garlic butter is super simple to make at home.

You need the below ingredients to make this easy compound butter.

  • A stick of softened room temperature butter (organic and grass fed is better)– By all means you can use salted butter if you have that. I just prefer to use unsalted butter so that i can control the amount of salt and the kind of salt that i want to use.
  • Salt and pepper-Use kosher salt or coarse salt if you are using unsalted butter. Use freshly ground pepper to add to the butter. These are my preference of the type of salt and pepper to use. However for ease and saving time you can use regular table salt , and ground pepper to add to your homemade roasted garlic butter mix
  • A bulb of fresh organic garlic to roast.
  • A little olive oil that is used to roast the garlic.
  • Fresh herbs- Herbs like basil, coriander, parsley, rosemary, dill, sage, thyme or cilantro work perfectly with this homemade compound butter . Use freshly chopped herbs to get that perfect burst of herbs in your butter. If you do not have fresh herbs in hand, you can use dry herbs too.
  • Check the notes below to see why is it better to use fresh herbs over dried for your compound butters.
  • For this recipe of roasted garlic butter i have used fresh chives and coriander leaves.

Homemade roasted garlic butter flavour variations

Adding flavours to your garlic butter using some spices , herbs and optional ingredients can completely up and enhance the flavours of your homemade garlic butter.

  • Spices : I sometimes add spices, sometimes not. You can add spices like oregano, chilli flakes, cumin seeds, smoked paprika. Dry roasted and roughly crushed cumin seeds will elevate the flavour of your roasted garlic butter to another level.
  • Herbs: As mentioned in the above section you can enhance the flavour of the roasted garlic butter by adding fresh or dried herbs. Depending on whether you want to slather the garlic butter on a toast, you want to use it to cook steak / saute veggies, or you want to use it for your festive holiday recipes , you can determine the herbs you want to add. Fresh herbs like basil, coriander, parsley, rosemary, dill, sage, thyme or cilantro work just perfectly with this homemade compound butter
  • Lemon: You can add a squeeze of lemon while whipping up the butter. This adds a nice tang to the regular butter flavour.
  • Extra virgin Olive oil: If you want this to be more spreadable,you can use half butter and half extra virgin olive oil . It acts as a great sauce for your fish or steak recipes.
  • Parmesan roasted garlic butter : To make parmesan roasted garlic butter, add 1/4 cup of freshly grated good quality parmesan to your butter to get that lovely cheesy roasted garlic butter.
  • Truffle garlic butter: Add some truffle salt or truffle paste to your butter to make some festive lush roasted garlic butter with truffle.

How to Roast garlic perfectly?

You can roast the garlic in the oven , Airfryer or in a pan.This post explains all three ways to roast the garlic.

Garlic can be roasted using the foil method, or using the parchment paper method.

Prepare your garlic for roasting by slicing off the top of the garlic using a sharp knife. Slice the top just as much so that the top of the garlic cloves is exposed

Drizzle some olive oil on the garlic.

Using Foil to roast the garlic

Wrap the whole garlic bulb in the aluminium foil , forming a pouch so that there is no way for steam to escape .

Using Parchment paper to roast the garlic (Roasting garlic without foil method)

Wrap the garlic clove in the parchment paper. Use a kitchen twine to hold and tie the parchment paper properly so that there is no way for steam to escape .

In this recipe i use Roasting garlic without foil method . Explaining below all three methods to roast the garlic perfectly without using foil.

Easy oven roasted garlic- Roasting garlic in the Oven (No foil method)

Preheat the oven to 200 C degrees .

Put the wrapped garlic bulb on the baking tray and roast for about 45-50 mins.

Pan roasted Garlic- Cast iron roasted garlic

Incase you have garlic cloves and do not want to roast a whole garlic bulb, you can use this method and roast the garlic in a pan.

You can roast the garlic with the skin on or after removing the skin. The skin helps create steam that in turn makes the garlic cloves soft and easy to use for recipes.

Heat the pan (i use a cast iron pan ) on the hob add garlic cloves. Cover it and keep moving the cloves to ensure the garlic doesn’t burn.

This takes 15-20 minutes on slow heat . Once done turn the heat off and let it rest for 4-5

Air fryer roasted garlic (No foil method)

Put the wrapped garlic bulb on the air fryer basket . Air fry at 200 C degrees for about 18-20 mins .

I use my Ninja dual airfryer , which is really handy and energy efficient for air frying, baking, roasting and dehydrating.

If like you use garlic a lot, you can roast 3-4 garlics (individually wrapped ) together . The number of garlics you can roast will depend on the oven / air fryer basket size.

Take out the garlic once done. You will know the garlic is roasted when the pods turn golden and feel tender and soft to touch.

Let it cool.

Once it is at room temperature, squeeze the bulb slowly and take out all the pulp.

If the garlic is roasted correctly the pulp easily slides out of the garlic pods.

How to make roasted garlic butter

Now that the garlic is roasted, assemble all the ingredients to whip up your roasted garlic butter.

Gently squeeze out the roasted garlic pulp from the garlic bulb. Mash it with the back of a fork or spoon.This helps evenly distribute the garlic in the butter.

This step is optional . You can straightaway squeeze the garlic pulp in the butter and proceed to the next step.

In a clean bowl add the softened butter (slightly soften in microwave if it is still solid). Add garlic pulp, salt, pepper, finely chopped fresh coriander and freshly chopped chives.

Slowly fold in all the ingredients together using a silicone spatula. Mix everything till everything is combined together with the butter.

Make sure there are no lumps and the butter is smooth and consistent.

At this stage you can decide how to store the butter – store in a jar or a butter dish .

Another option is to roll it into log . You can use a cling film (Plastic wrap) or parchment paper (baking paper), and store it in the fridge or freezer to be used later.

How to Roll Compound roasted garlic and herb butter into a Log

Take a Square or rectangle parchment paper or cling film.

Scoop out all the butter . Lay it on one end of the paper (leaving a few inches on the sides to roll the paper).

Now tuck in the first fold under the butter, and roll the paper. Twist the sides of the paper, and tie with a kitchen twine so that the butter is secure.

Put this butter log in the fridge for 3-4 hours so that it is hard enough to slice neatly.

Why is it better to use fresh herbs Vs dry herbs to make Sgarlic butter at home ?

The oils in fresh herbs are at their peak, contributing to a fresher and more aromatic taste.
Fresh herbs also contribute a pleasant and smoother texture to the garlic butter, especially when finely chopped.
These also add a delightful aroma to the garlic butter, enhancing the overall sensory experience of the butter.
Using fresh herbs in garlic butter enhances the flavor, aroma, appearance, and nutritional value of the final product. It’s a simple yet effective way to elevate the overall quality of your culinary creations.
That said ,if you do not have the option to use fresh herbs you can replace them with dried herbs.

Using the roasted garlic and herb compound butter in your recipes

This is my tried and tested roasted garlic butter recipe that i have been making for quite sometime now . We have loved eating this homemade compound garlic butter .

You can use this garlic butter for making garlic butter bread, garlic butter toasts , cheesy garlic crumpets, bruschettas or garlicy bagels.

Add a spoonful of this delicious garlic and herb butter to your roasted vegetables, pastas, curries, soups and dals.

Use this roasted garlic and herb butter as a base for sauteed veggies ,mushrooms, paneer, chicken, fish or steak in this garlic butter.

Drizzle some of this roasted garlic butter on your mashed potatoes, jacket potatoes or corn on the cob for that flavourful punch.

There are innumerable ways to elevate your meals with this delicious homemade gourmet butter, adding a touch of luxury to your dishes.

Ways to store Roasted garlic butter.

You can store the butter as is in a butter jar , glass butter box or a butter dish . Make sure to refrigerate it.

You can also roll it into log using a cling film (Plastic wrap) or parchment paper (baking paper), and store it in the fridge or freezer to be used later.

Another way of storing the compound butter is adding it to the silicone tray , and freeze it. Once frozen, take out the cubes and store in a ziplock bag in the freezer to be used as and when needed.

Tips and tricks to make that perfect Roasted garlic butter at home

  • For this recipe you need to use softened butter at room temperature . Take the butter out on the counter 2-3 hours before you plan to start.
  • Incase you forget to take the butter out , you can use this hack that i use most of the times. Your oven or airfryer is still hot after the garlic ic roasted. Keep the bowl with butter in the warm oven / air fryer (make sure these are turned off ) for a few minutes to soften it.
  • You can also microwave. Microwave the butter for 20 seconds to soften it.
  • Using the type of garlic determines the flavour of the garlic. Make sure you use fresh organic garlic’s to make the roasted garlic butter. Fresh garlic will yield a more aromatic and robust taste.
  • It’s always better to use fresh herbs. Fresh herbs impart a punch of full fresh flavour and aroma to this compound butter. Fresh herbs provide a more vibrant and robust flavor compared to the dried herbs. If the herbs have excessive moisture you can squeeze the herbs before adding to the butter.
  • Customize Flavors– Experiment with different herbs and spices like rosemary or thyme to tailor the butter to your taste. Consider adding a pinch of cayenne pepper or chilli flakes for a subtle heat.
  • Combine well – Mix the butter and rest of the ingredients really well and ensure the butter is smooth and creamy.

  • 1 whole bulb Fresh garlic bulb
  • 1 tbsp Olive oil Or any oil of your preference

Roasted garlic butter

  • 1 bulb Roasted Garlic Use suggested method to roast the garlic
  • 1 stick Unsalted butter
  • 1 tsp kosher salt or any preferred salt
  • 1 tsp crushed black pepper freshly crushed
  • 1/4 cup freshly chopped coriander
  • 1/4 cup freshly chopped chives

Instructions
 

Roasting Garlic

  • Prepare your garlic for roasting by slicing off the top of the garlic using a sharp knife. Slice the top just as much so that the top of the garlic cloves is exposed .
  • Drizzle some olive oil on the garlic. Put the top back.
  • Cut a rectangle of parchment paper. Crush the parchment paper with hands, to help it stay put.
  • Wrap the garlic clove in the parchment paper. Use a kitchen twine to hold and tie the parchment paper properly so that there is no way for steam to escape
  • Use either of the below ways to roast garlic
    Easy oven roasted garlic- Roasting garlic in the Oven (No foil roasted garlic method)

    Put the wrapped garlic bulb on the baking tray and roast for about 45-50 mins.

    Put the wrapped garlic bulb on the air fryer basket and air fry at 200℃ for about 18-20 mins .
    Take out the garlic once done.
    You will know the garlic is roasted when the pods feel tender and soft to touch and turn golden. Let it cool.
    Pan roasted Garlic- Cast iron roasted garlic
    Heat the pan (i use a cast iron pan ) on the hob add garlic cloves. Cover it and keep moving the cloves every 2-3 minutes to ensure the garlic doesn't burn.
