  • few fresh mint leaves finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground/ crushed pepper

Olives and Tomato mix

  • Chop the tomatoes, and the olives.Finely chop parsley leaves, and a few mint leaves.

Garlic bread

  • Slice you breads into 1/2" slices.
  • Rub a nice layer of garlic butter on each slice.
  • Sprinkle some grated cheese. I used Cheddar. You can use any cheese you want to.
  • n a preheated oven heat these slices at 170 degrees for 4-5 minutes, till the cheese melts.
Now top each slice with a generous amount of the olive tomato mix. Drizzle a little EVOO and serve.

To make garlic butter, take 2 tbsp of your regular butter (make sure it is smooth enough to mix). I use Kerrygold butter, or yeo valley organic butter. In India my mum makes this using Amul butter.Grate 7-8 cloves of fresh garlic, and mix in the butter. Add 1/4 tsp of dried oregano . Give everything a good mix, and store in a jar in the fridge.
