1/4cupravishing rosemary spice blendor use homemade spice blend as above in my notes
1/4 cupolive oil
1tspravishing rosemary spice blend to sprinkle
Instructions
Soak the cut potatoes in ice water for 20-25 minutes.
take out of water, and pat dry with a kitchen towel.
Mix oil, and ravishing rosemary spice mix.
Rub the mix on the potatoes, and lay the potatoes flat on a tray lined with parchment paper.
Put it in the oven at 200 degress for about 30-35 mnutes, till the wedges are cooked.flip once halway through.
once done take out of the oven. Sprinkle with some more ravishing rosemary spice and serve.
Notes
If possible use red potatoes, russet potatoes, which are really good for making wedges.Use enough oil to coat the potatoes nicely so that they cook evenly.After you wash and scrub clean the potatoes, add them to ice cold water for 20-25 minutes. This step is optional, but it does help to make potatoes crispier, and prevents them from sticking. Make sure to flip the potatoes halfway, so that both the sides are properly cooked.Cook these at a high heat so that these are nice and golden on the outside.
