How to Roast garlic perfectly (Three Simple Methods!)
Roasting garlic brings out a deep, caramelized sweetness to the garlic. In this post i use three different techniques to roast garlic perfectly : in the oven, air fryer, or pan.
Also i have described foil and parchment paper techniques for wrapping, so you can roast garlic using any method. Personally i prefer using parchment paper, as i do not like cooking using aluminium foil.
You can roast the garlic in the oven , Airfryer or in a pan. This post explains all three ways to roast the garlic.
Key Ingredients / tools
Here is a list of a few simple ingredients / tools that you will need before you start Roasting those perfectly delicious garlics:
- Garlic Bulbs: Fresh, firm garlic bulbs are key to a great roast.Better still if you can find organic garlics.
- Olive Oil: This adds richness and helps the garlic to caramelize perfectly
- Aluminum Foil or Parchment Paper: For wrapping the garlic, keeping the steam in for a tender roast. You can use either of these as per availability and your preference.
- Sharp Knife: To slice off the top of the garlic bulb.
- Baking Tray (for oven roasting): To place the wrapped garlic in the oven, if you use the oven roasting method.
- Cast Iron Skillet (for pan roasting): This is ideal for even heat distribution when roasting garlic in a pan.
- Air Fryer: A convenient option for faster roasting, though you can always use the oven or the pan if you don’t have an air fryer.
Preparing Garlic for Roasting
To start, prepare your garlic by slicing off the top of each bulb with a sharp knife—just enough to expose the tops of the cloves.
Drizzle a bit of olive oil on top of the garlic for a rich, golden finish.
Wrapping Garlic: Using Foil or Parchment paper to Roast garlic
You can use either foil or parchment paper to wrap the garlic, depending on your preference.
Using Foil to roast the garlic
Wrap the whole garlic bulb in the aluminium foil , forming a pouch so that there is no way for steam to escape .
Using Parchment paper to roast the garlic (Roasting garlic without foil )
Wrap the garlic clove in the parchment paper. Use a kitchen twine to hold and tie the parchment paper securely so that there is no way for steam to escape .
In this recipe i use Roasting garlic without foil method . Explaining below all three methods to roast the garlic perfectly without using foil.
Methods to Roast Garlic
Easy oven roasted garlic- Roasting garlic in the Oven (No foil method)
Preheat the oven to 200 C degrees .
Put the wrapped garlic bulb on the baking tray and roast for about 45-50 mins.
Pan roasted Garlic- Cast iron roasted garlic
Incase you have garlic cloves and do not want to roast a whole garlic bulb, you can use this method and roast the garlic in a pan.
You can roast the garlic with the skin on or after removing the skin. The skin helps create steam that in turn makes the garlic cloves soft and easy to use for recipes.
Heat the pan (i use a cast iron pan ) on the hob add garlic cloves. Cover it and keep moving the cloves to ensure the garlic doesn’t burn.
This takes 15-20 minutes on slow heat . Once done turn the heat off and let it rest for 4-5 minutes.
Air fryer roasted garlic (No foil method)
Put the wrapped garlic bulb on the air fryer basket . Air fry at 200 C degrees for about 18-20 mins .
I use my Ninja dual airfryer , which is really handy and energy efficient for air frying, baking, roasting and dehydrating.
If you use garlic often, consider roasting 3-4 bulbs at once. If you are roasting more than one whole garlic, ensure each one is individually wrapped. The capacity will depend on the size of your oven or air fryer basket.
How do you know the garlic is perfectly roasted ?
Take out the garlic once done. You will know the garlic is roasted when the pods turn golden and feel tender and soft to touch.
Let the bulb now cool.
Once it is at room temperature, then gently squeeze from the bottom of the bulb to slowly release the creamy, caramelized garlic.
If the garlic is roasted correctly the pulp easily slides out of the garlic pods like in the below pictures.

FAQ’s
Yes, you can roast garlic in advance and store it for later use. It keeps well in an airtight container in the fridge for up to a week or can be frozen for up to 3 months.
Roasted garlic stays fresh in the fridge for about a week. If you’ve roasted a large batch, consider freezing individual cloves or bulbs for easy access later.
You can roast garlic without wrapping it, but it may dry out faster. Wrapping it keeps the moisture in and helps the garlic stay tender.
The garlic is ready when it feels soft to the touch and the cloves turn golden brown. If it feels firm, give it a bit more time.
For whole bulbs, you don’t need to peel each clove individually. This helps keeps the cloves moist and tender as they roast, allowing you to squeeze the soft garlic out of each clove once it’s done.
If you’re roasting individual cloves, you can choose to leave the skins on or peel them. Leaving the skins on helps retain moisture and creates a bit of steam within each clove, making them softer and easier to mash. Peeled cloves can also be roasted in a pan or oven, but they may require closer attention to prevent drying out.
Absolutely! Roasting garlic alongside vegetables like carrots, potatoes, and onions enhances the flavor of the entire dish, and saves so much time and electricity Just place your wrapped garlic on the same baking sheet/ airfryer tray as the veggies, and let everything roast together.
Roasting garlic slightly reduces some of its allicin content (the compound responsible for raw garlic’s health benefits), but it is still nutritious and contains antioxidants. Also, it is easier on the stomach, making it a great option for those who find raw garlic hard to digest.
