This protein rich mousse can be easily adapted to be vegan, sugar-free, or customized with different flavors. You don’t need any fancy techniques—just melt, blend, and chill. That’s it!
🍫 Ingredients & Best Substitutes
Silken Tofu (300g, I used clearspring uk tofu)
Silken tofu is what gives this mousse its ultra-creamy texture. Unlike firm or extra-firm tofu, silken tofu is much softer and blends seamlessly into a smooth, velvety consistency. This has approximately 21gms protein making it quite a high protein chocolate mousse compared to other desserts.
If you do not have tofu you can use a ripe Avocado for a rich, slightly denser mousse. It will add a mild earthy flavor but works beautifully with chocolate.
Thick, chilled Coconut Cream is another alternative for a soy-free chocolate mousse version. It creates a luscious, airy texture, however it does add coconut flavour to the dessert.
Greek yogurt as an alternative to tofu can add a tangy twist while keeping the mousse thick and creamy.
Tofu is a good replacement for egg in such desserts. Check out my guide to egg alternatives for cooking and baking for more egg substitutes for your recipes.
2. Chocolate Chips (¾ cup, milk or dark)
I add vegan chocolate chips to this recipe for a perfect deep, rich chocolate flavor. You can use either milk or dark chocolate chips, depending on your preference.
As an alternative to chocolate chips you can use Dark Chocolate Bar (70% or more cocoa). Chop it into small pieces and melt as you would with chocolate chips.
Cacao Paste or Unsweetened Chocolate is a more natural option. However, you may need to add extra sweetener.
For a keto-friendly or low-sugar option, sugar-free chocolate chips work well.
3. Cocoa Powder (2 tbsp)
Cocoa powder enhances the chocolate depth and gives an extra boost of flavour to this recipe
Raw Cacao Powder is a great healthy alternative to cocoa powder. It is less processed and slightly more bitter but packed with antioxidants.
Carob Powder – A caffeine-free alternative with a naturally sweet, nutty flavor, can be used as an alternative.
4. Maple Syrup (1 tbsp)
Maple syrup adds a touch of sweetness and blends smoothly with the other ingredients.
Other substitutes that work as well are :
- Honey – Works well if you’re not making a vegan version.
- Agave Syrup – A good vegan-friendly alternative that has a mild taste.
- Date Syrup – Natural and nutrient-rich, date syrup adds a caramel-like sweetness.
- Stevia or Monk Fruit Sweetener – For a sugar-free version, a few drops of liquid stevia or monk fruit extract can be used.
5. Vanilla Extract (1 tsp)
A small amount of vanilla extract enhances the overall flavor, making the chocolate taste richer and more well-rounded.
Some other alternatives to vanilla extract are :
- Almond Extract – Adds a subtle nutty flavor that pairs beautifully with chocolate.I love a good chocolate dessert with almond flavour.
- Hazelnut Extract – For a Nutella-inspired chocolate dessert twist.
- Coconut Extract – If using coconut cream instead of tofu, this can complement the flavor.
🥄 How to Make It
Melt the Chocolate: Melt the chocolate chips in the microwave in 30-second bursts, stirring in between, or using a double boiler. Once smooth, allow it to cool to room temperature.
Prepare the Tofu: Remove tofu from the box and drain any excess water . No pressing is needed, as it is already soft and delicate.
Blend Everything Together: Add all ingredients—tofu, melted chocolate, cocoa powder, maple syrup, and vanilla extract— to a blender or food processor. Blend until completely smooth and creamy.
Chill & Serve: Transfer the chocolate mousse in portions in ramekins or small glasses/ serving bowls. Refrigerat it for at least 30 minutes before serving.
