Easy eggless waffles recipe- Make crispy, fluffy eggless whole wheat flour waffles with this simple recipe and few ingredients! A healthier breakfast option made with whole wheat flour, milk and simple ingredients. These are crispy on the outside, soft on the inside, and very easy to make! A favourite with my kids.

Waffles are our favourite breakfast, but traditional recipes often rely on eggs and refined flour. There are times when the kids want waffles but i run out of eggs, or its a tuesday or other festivals when we generally do not eat eggs.

This no egg waffles recipe recipe is our staple for those days. Also for the people looking for a healthier, egg-free alternative, these whole wheat waffles without eggs are a perfect solution.

These waffles are made with a mix of whole wheat and all-purpose flour for a great balance of nutrition and taste.

Why we love these classic eggless Waffles

No Eggs Needed – Great for those with egg allergies or if you run out of eggs unexpectedly but still want waffles.

Healthier Choice – A blend of wholewheat flour and all purpose flour in this recipe balances fiber and nutrients and gives a perfect texture.

Easy to Customize – I used Shakkar (Jaggery powder ) as a sweetener for this recipe. You can use your favourite sweetener like coconut sugar, unrefined sugar , maple syrup to sweeten the waffles.

We love a bit of sweetness in the waffles so i use shakkar. You can absolutely make these without any sweetener. Also you can use dairy free and use plant-based options as alternative ingredients to make these waffles without milk recipe.

Light & Crispy – Baking soda, baking powder, and buttermilk (or a combination of milk and yoghurt) make these waffles soft and fluffy inside.You will not even know these do not have eggs in them.

Ingredients and alternatives

Dry Ingredients

  • Flour– 1 cup all-purpose flour and 1 cup whole wheat flour. You can use 2 cups of whole wheat flour if you want to avoid using all purpose flour (refined flour/ maida). The waffles do turn out nice and delicious but a bit dense and not light and airy with only whole wheat flour
  • 1/2 cup sugar (or any sweetener of choice)- For this recipe i have used Shakkar (Jaggery powder). You can use your preferred sweetener like coconut sugar, unrefined sugar , maple syrup to sweeten the waffles. You can absolutely make it without any sweetener.
  • 1 tsp baking soda and 2 tsp baking powder– If you use self raising flour you do not need to add these. However as i am using all purpose and wholewheat flour , addition of baking soda and baking powder makes these waffles soft and airy from the inside.

Wet Ingredients

  • 1 cup milk and 1 cup yogurt (or buttermilk), or you can simply use 2 cups of buttermilk instead of milk and yogurt. The acidity in buttermilk or yogurt reacts with baking soda and baking powder, making the waffles light and fluffy. It also adds Moisture keeping the waffles soft inside while keeping them crispy outside.
  • 1/2 cup softened or melted butter– You can use salted or unsalted butter. You can also use coconut oil or olive oil instead of butter.
  • 2 tsp vanilla extract or you can use any flavour of your choice. I love using rose extract or almond extract sometimes to add different flavors. You can also add cinnamon powder or pumpkin spice powder to elevate the flavours of these eggless waffles.

Step by step Recipe for eggless waffles

Mix the Wet Ingredients- In a bowl whisk together milk, yogurt (or buttermilk), softened butter, and vanilla extract until smooth.

Mix the Dry Ingredients– In another bowl, mix all-purpose flour, whole wheat flour, shakkar, baking soda, and baking powder so that everything is well combined.

Combine Wet & Dry Ingredients– Slowly add the wet mixture to the dry ingredients. Stir gently until mixed. Do not overmix as it will lead to a denser consistency.

Preheat the Waffle Maker– Heat your waffle maker and lightly grease it with butter or oil .

Cook the Waffles– Pour the batter onto the waffle maker and cook as per its instructions. Pour enough batter so that the waffle tray holes are not empty. Cook until golden brown and crispy . It takes about 6-8 minutes depending on the waffle iron’s size.

Serve – For the best texture, serve the waffles hot. Top with your favourite fruits, nuts, syrups, or spreads. You can top it with honey, maple syrup, fresh fruits,berries , or nut butters for a delicious wholesome waffle breakfast.

Variations of classic eggless waffles

  • Chocolate Chips – Add some milk chocolate chips or dark chocolate chips to this recipe to make chocolate chip waffles.
  • Spiced Waffles – Mix in cinnamon, nutmeg, or cardamom for a cozy flavour.
  • Nutty Crunch – Top the waffles with chopped walnuts, almonds, or pecans for some yummy crunch.
  • Vegan Option: To make vegan waffles use replace dairy with plant-based milk and replace butter with coconut oil or vegetable oil. Ensure yogurt that you use is also dairy free.

Tips for Perfect Whole Wheat eggless Waffles

  • Consistency of Batter: The batter should be thick but pourable. If it’s too thick, add a little more milk. If too thin you can sprinkle in a bit more flour to get the right consistency.
  • Crispiness: For extra crispy waffles, preheat the oven to 200°F (93°C). Place cooked waffles directly on the oven rack instead of stacking them ,to keep them warm and crisp while you finish cooking the remaining batter.

Storing and Freezing the Waffles

Once cooled, stack the waffles with a sheet of parchment paper between each layer to avoid sticking. Place them in an airtight container or a resealable bag.

Waffles can be refrigerated for about 2-3 days. For best results, reheat in a toaster , airfryer or oven.

Leftover waffles can also be frozen. Once cooled, place them in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag. Reheat in a toaster, airfryer or oven for a quick delicious breakfast.
