📝 Ingredients You will Need
For the Avocado egg sandwich filling:
🥚 2 boiled eggs, chopped- See below instruction on how i cook the perfect hard boiled eggs.
🥑 1 ripe avocado, mashed- Slice the avocado and use the back of the fork to roughly mash it.
🧂 Salt and pepper to taste
🌶️ Red chilli flakes (optional)- These are completely optional but i love adding a bit of spice to my boiled eggs and avocado sandwich.
🍋 Juice of half a lemon
To assemble the sandwich you will need:
🍞 2 slices of your favourite bread, slightly toasted- This is how i love it. If you love cold sandwiches you do not need to toast the bread. This avocado and boiled egg sandwich tastes great as a cold sandwich too.

🧀 Cream cheese for spreading- You can omit using cream cheese , as the base avocado and egg filling is creamy in itself. However cream cheese adds a lovely creamy taste to this.
Alternatives to using cream cheese – If for any reason you do not want to add cream cheese you can use
- Hummus -Adds a nutty, savory flavor and keeps the sandwich dairy-free.
- Vegan Cream Cheese or Cashew Spread: Perfect for dairy-free diets while keeping the creaminess.
- Mashed Cottage Cheese: Slightly chunky and mild—great if you want more texture.

A creamy, well-cooked egg is the foundation of this sandwich. Here’s how to make perfect hard-boiled eggs—with bright yellow yolks, no rubbery whites.
Boil water in a Kettle
Arrange your eggs in a single layer in a saucepan. Fill the pot with boiled water until the eggs are covered by at least 1 inch. Add a teaspoon of salt/ splash of vinegar.
Boil for 7-8 minutes: Let the eggs boil for 7-8 minutes.
Turn Off the Heat and use a slotted spoon to move the eggs into a bowl of ice water. Let them cool for 5–10 minutes—this makes peeling easier and stops the cooking process.
Peel & Use:
Gently tap the egg on the counter, roll to crack, and peel. Start peeling from the wide end (where the air pocket is).
