This isn’t the lassi you will find everywhere. This is the thick, creamy malai-loaded lassi I’ve grown up drinking in Amritsar and honestly, nothing else comes close.

Amritsari meethi lassi is a thick, creamy yogurt-based drink made with dahi/ curd (yoghurt), milk, and sugar, blended until frothy and topped with malai or white butter (makkhan).

Amritsar is home! No visit back home is ever complete without a tall, frothy glass of its iconic meethi lassi.

Growing up in Amritsar, meethi lassi wasn’t just a drink — it was a way of life.

It’s what we grew up drinking after meals, on hot summer afternoons, and during family outings. Even now, every time i’m back in amritsar , it’s the first thing i have, straight from the airport sometimes.

My kids love it just as much now .

Amritsar is famous for its lassi, and honestly there is nothing quite like it anywhere else in the world, or even outside Amritsar.

If you’ve ever had lassi from Ahuja Milk Bhandar, you’ll know exactly what I mean. That rich, मलाईदार (creamy), perfectly sweet lassi served in large steel glasses, topped with creamy white butter.

What Makes Amritsari Lassi So Special?

The authentic taste of Amritsari lassi comes from its roots, the fresh doodh (milk) and dahi (yoghurt) of Amritsar. The quality of dairy there, combined with traditional methods, gives it that unmistakable richness.

But it’s also more than just ingredients.

It’s the place. The atmosphere. The climate. The traditional way of churning lassi. The freshness of ingredients. And honestly, the joy and satisfaction of being home.

That exact flavour can’t be 100% recreated anywhere else.

But this recipe comes very close.

The Secret to Authentic Amritsari Lassi

One simple but important detail makes all the difference:

While most lassi recipes use water, Amritsari meethi lassi is made only with thick dahi/curd and milk.

That’s what gives it its signature creamy , rich and indulgent texture

Ingredients for the lassi (Serves 4)

500 gms thick yoghurt (dahi)– In Amritsar, the dahi is incredibly fresh, rich, and naturally thick,which is what gives lassi its signature creamy texture.
It is preferable to use full-fat curd/ yoghurt for best results.

Homemade dahi works really well,or even store bought natural yoghurt will do.
As an alternative, greek yoghurt works really well if your regular yoghurt / dahi isn’t thick enough.

If using Greek yoghurt, you can slightly increase the milk to balance consistency

1 cup milk-Milk adds richness while keeping the texture smooth and drinkable, without diluting the flavour (unlike water).
Preferably use full-fat milk for a creamy consistency and creamy finish.
As an alternative you can use toned / semi skimmed milk, but the lassi will be lighter.

¾ cup sugar (adjust to taste)- Amritsari lassi is often on the sweeter side, perfectly balancing the tanginess of the yoghurt.

I do love it sweet, but you can always balance and adjust the sweetness as per your preference and based on how sour your dahi is.
Any kind of regular sugar will do. You can also use powdered or castor sugar for quicker blending.

Ice cubes– Ice helps chill the lassi instantly and gives it that light, frothy texture when blended.

Skipping ice and using pre-chilled ingredients if you want to keep it extra thick.

Malai (clotted cream) / White butter (makkhan)- This is what makes the lassi truly indulgent and authentically Amritsari. That thick creamy malai layer on top is iconic and adds richness to every sip.

Use fresh malai if available for the most authentic taste.

As i do not have fresh malai at home in UK , I substitute with clotted cream . Tis is optional, if you do not want it , you can skip adding malait / butter.

How to Make Amritsari Meethi Lassi

Add chilled yoghurt, milk, and sugar to a blender.

Blend until completely smooth and creamy.

Add ice cubes and blend briefly to chill and froth the lassi.

Pour into tall glasses.

Add a spoonful of thick homemade malai (or clotted cream) and some freshly churned white butter (makkhan).

Serve immediately, chilled.

  • 1 cup milk Full fat / semi skimmed
  • ¾ cup sugar adjust to taste
  • Ice cubes

Variations You Can Try

Though I personally don’t love experimenting too much with my meethi Amritsari lassi.For me, nothing beats the basic, simple, authentic version. However you always have the option to play with flavours and ingredients to suit your taste.

  • Cardamom (Elaichi) Flavour
    Add a small pinch of freshly ground cardamom powder to the lassi while blending to give it a warm, aromatic flavour that beautifully enhances the sweetness and makes it feel even more indulgent.
  • Saffron (Kesar) Lassi
    Soak a few strands of saffron (kesar) in a tablespoon of milk for a few minutes, then add it to the lassi to create a luxurious version with a delicate aroma and a beautiful golden hue.
  • Dry Fruit Garnish
    Top your lassi with finely chopped pistachios and almonds/ cashews to add a slight crunch and richness. Adding nutes makes it feel more festive and closer to the kind of lassi often served on special occasions.
